Here is a recipe to serve a few (about 4-6+ people).
The great thing about this recipe is that there are really no exact amounts required. You can adjust it to your liking or whatever you have available...this is only a guideline.
You can substitute the chicken with beef, pork, shrimp, or even tofu...or any combination of these. It can be made vegetarian too.
There really are no rules are when making stir-fry, that is one of the great things about Asian cooking.
All my cooking is based on inspiration and what I have in stock at the time.
Ingredients
- 2 - 3 lbs chicken, cut in 2 inch pieces, coated with little bit of flour or corn starch
- 2 - 3 large onions, cut in 1 inch slices
- 2 - 3 bell peppers, cut in 1 inch slices
- 2 - 6 Italian hot peppers, cut in rings
- about 1/2 lb of fresh green beans, washed and tips removed
- 2 - 3 carrots, cut in 4 long pieces, then cut on an angle in 2 inch pieces
- 2 - 3 celery stalks, cut in 4 long pieces, then cut on an angle in 2 inch pieces
- 2 - 6 cloves of garlic, chopped
- 2 - 3 tbsp black bean sauce
- soy sauce
- canola oil
- steamed rice
Cooking Directions
Since there are a lot of ingredients, you will have to cook them in batches.
- Prepare all ingredients as listed above before starting to cook.
- Heat a large skillet or wok (high heat) for about 5 mins
- Add about 1-2 tbsp canola oil to pan.
- Add onions and a couple shakes of soy sauce, cook until slighty soft, stirring continuously, remove from pan, and place into a large bowl...or a large roasting pan (to mix everything together at the end)
- Repeat step 3 and 4 with bell peppers and green beans (cook separately)
- Repeat Step 3 and 4 with hot pepper, carrots, and celery, they can be stir-fried together, remove
- Add some oil to the pan and add chicken and garlic (do not burn the garlic), stir fry until cooked completely; cut a piece of chicken to check for doneness.
- Add black bean sauce to pan and several tablespoons of water at a time to make the sauce to your liking.
- Add chicken, garlic, and sauce to the vegetables and mix well.
- Serve chicken and vegetables with steamed rice.
